Champagne Mojitos

. A puckery drink prepared with rum and fresh mint like a classic mojito, but topped with a splash of Champagne.

Ingredients

  • 3/4 cup sugar
  • 3/4 cup water
  • 1 1/2 cups packed mint leaves, plus 12 mint sprigs, for garnish
  • 6 limes, cut into wedges
  • 2 cups light rum
  • Cracked ice
  • 3 cups Champagne or sparkling wine

Sparkling Pomegranate Punch. Pomegranate juice flavored with a little citrus, a little cider and then topped off with champagne

Ingredients

  • 2 cups pomegranate juice
  • 1 1/2 cup orange juice
  • 2 (12 ounce) bottles apple cider (use non-alcoholic if desired)
  • juice from 1 lemon
  • 1 (750ml) bottle champagne or sparkling wine OR sparkling water/club soda (for a non-alcoholic version)
  • couple dashes of orange bitters
  • arils from 1 pomegranate

Sorbet and Champagne Cocktail. A scoop of sorbet takes the place of the traditional sugar and bitters and turns this classic into a delicious holiday slush.

Ingredients

  • 1 teaspoon sorbet (we like raspberry or passion fruit)
  • Chilled Champagne or Prosecco

White Sangria. A twist on your classic red sangria.

Ingredients

  • orange
  • 1 lemon
  • 1 1⁄2 cups rum, chilled (clear)
  • 1⁄2 cup Grand Marnier, chilled
  • 1(750 ml) bottle Riesling wine, chilled
  • 1⁄2 cup vodka
  • 1⁄2 cup lemon juice, chilled
  • 3 -4 tablespoons sugar
  • 1 Granny Smith apple diced
  • club soda, chilled

Cocquito. A creamy tropical coconut eggnog made with spices and white rum.

Ingredients:

  • 2 egg yolks, beaten
  • (12 fluid ounce) can evaporated milk
  • 1 (14 ounce) can cream of coconut
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup white rum
  • 1/2 cup water
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
